Roasted Red Pepper Sauce 🌿🫑 Cooking has always been the thing that can bring peace into my life when I am in need of a reset. Sometimes I simply don’t want to commit to an extravagant meal that is going to take several hours, but I need to cook. My mind is often wandering, dancing around a cliff edge in a Portuguese wonderland and cooking is the roadmap to bring my head out of the clouds and back down to earth. It’s as simple as this… cooking is one of the purest things you can do for your soul. At least for me.

INGREDIENTS
2 tablespoons olive oil
2 red bell peppers, chopped
1/2 onion, chopped
5 cloves garlic, peeled
1/4 cup nutritional yeast
2-3 tablespoons oat milk
1 tablespoon pasta water
Salt
Pepper

METHOD
1. Toss bell pepper, garlic, and onion in olive oil. Bake at 425F for 30-45 minutes.
2. Blend all ingredients.

🌱 Pour over your favorite pasta noodles and top with fresh spinach or basil.

Mushroom Spinach Orzo Soup

INGREDIENTS
2 tablespoons olive oil
1/2 onion, diced
3 celery stalks, diced
8 ounces mixed mushrooms (Maitake, oyster, bella)
1 tablespoons vegetable bouillon
Salt, to taste
Pepper, to taste
3-4 sprigs thyme
4 cup vegetable broth
2 bay leaves
1 cup orzo
1/4 cup plant-based heavy cream
1 cup spinach

METHOD
1. Heat oil over medium-low in soup pot. Cook shallot, celery, shredded/chopped mushrooms, salt and pepper for 5-7 minutes.
2. Add vegetable bouillon, thyme, and minced garlic. Cook additional 2 minutes.
3. Add vegetable broth, bay leaves and bring to a simmer.
4. Add orzo. Simmer 15 minutes.
5. Add heavy cream and spinach.

Whipped Feta
7 Ounces Vegan Feta
1/2 Cup Vegan Yogurt, coconut
1/2 Teaspoon Lemon Zest
2 Cloves Garlic, minced
1/4 Cup Pine Nuts, toasted, to top
2 Tablespoons Date Syrup, to top
1 Tablespoon Fresh Herbs, to top (parsley works well)

METHOD
1. Whip vegan feta cheese, unsweetened coconut yogurt, sea salt, garlic, and lemon zest in the food processor for 2-3 minutes or until completely smooth.

🥜Top: Date syrup, toasted pine nuts, and fresh herbs.

🫓Serve: With freshly made greek pita bread.

Ginger Dressing 🫚🍋🌱 This ginger dressing takes all of 5 minutes and is the perfect addition to add to your weekly meal prep bowls.

INGREDIENTS
Large piece of ginger, 2-3 inches
2 cloves garlic
1 celery stalk
1/4 of an onion
3 tablespoons rice vinegar
3 tablespoons soy
2 tablespoons ketchup
1/2 cup olive oil
1 teaspoon granulated sugar
Squeeze of lemon
Black pepper, to taste
2-3 tablespoons water

METHOD
1. Blend all ingredients in food processor until smooth.

🌱 Let’s make mushrooms the star of your plate this month! This recipe takes 15 mins and is the perfect whole plant-based ingredient for your dinner.

METHOD
1. Drizzle large oyster mushroom in oil. Air-fry @ 400F for 8-10 minutes or crispy. (pink if you can find them! DM me if you need help)
2. Rip and dip in your favorite sauce. I like lemon caper butter.

Plant-Based Greek Avgolemono Soup 🌱🍋 This soup only takes 30 minutes and it so freshing. A classic Greek avgolemono soup contains egg and chicken, so I added a few changes.

2 tablespoons olive oil
1/2 onion, diced
3 celery stalks, diced
2 carrots, diced
1 can jackfruit, drained and shredded
1 tablespoons vegetable bouillon
Salt, to taste
Pepper, to taste
5 cup vegetable broth
2 bay leaves
1 cup orzo
2 lemons, squeezed
1/4 cup plain plant-based yogurt
Large handful of fresh dill

METHOD
1. Heat oil over medium low in soup pot. Cook onions, celery, carrots, salt, and pepper for seven minutes.
2. Add shredded jackfruit and vegetable bouillon. Cook additional 3-4 minutes.
3. Add vegetable broth and bring to a simmer.
4. Add bay leaves and orzo rice. Simmer 15 minutes.
5. Add lemon juice, yogurt, and fresh dill.

I cant believe how these turned out. After mutiple shell attempts. Then I almost wrote the cashew ricotta filling off as impossible (couldnt get the light airy texture I was looking for). In the end, these kicked ass and I cannot wait to feed to my coworkers.

Another attempt and these will be website ready.

Roma Nigiri 🍣🍅🌱 brb my soul is waking up.

INGREDIENTS
Roma Sashimi Pieces
6 Roma Tomatoes
2 Tablespoons Soy Sauce
1 Tablespoon Sake, optional
1 Teaspoon Sesame Oil
1 Teaspoon Rice Vinegar
1 Tablespoon Seaweed Flakes
Few drops Liquid Smoke
1 Teaspoon Ginger, grated
1/2 Tablespoon Sriracha
Few Cracks Peppercorn

METHOD
1. Bring salted water to a boil and boil roma tomatoes until skin cracks (1-3 minutes).
2. Immediately transfer to an ice bath and allow tomatoes to cool fully.
3. Slice tomato in half length wise, then again length wise (4 long pieces). Remove skin and slice out seeds and core.
4. Add remaining ingredients and marinate in refrigerator for at least 30 minutes. Ideally overnight.

Serve as nigiri over rice balls, topped with seaweed caviar.

4 years ago if I could look into the future and see myself posting this, I would be clinically mind-blown.

I grew up in a very small town where drinking was life. As kids we started drinking under the train tressels or parked at Kroner Bridge until 4am. It was just simply the way things were.

Inevitably as kids we turned to adults and bridges morphed to dark bars and cigar smoke. I remember it all so clearly. I never felt dependent on alcohol, but I always drank it. I couldn’t remember a time I went longer than 4 days without a drink… not since 14. Its just the way things were.

4 years ago I hit this crossroad. I could so clearly see where I wanted my life to go… I could see it all in my head. But there was this looming distraction fogging the plan. The smoke, the liquor- it always delayed the plan. Daunting to flip things upside down because honestly, the plan was a lot of work. It was going through mental, physical, and emotional change to become the version of myself I felt at my core.

The plan was daunting, so i started with 1 month… and I told no one. I was never meant to last this long but 1 month turned to 3. And 3 months turned to 3 years. And I felt everyday turning to daylight. To feel a 15 year fog lift from your brain is magic.

I firmly stand in the believe that nothing would be what it is now if I hadnt went through this change.

🖤 When I imagine culinary experiences around the world, there are always those special dishes that stick out. Just the mere thought of Vietnam sends an image of a smoking banh mi cascading down my thoughts. Wandering around the bustling streets showcase the influence that French culture has in the Asian country.

INGREDIENTS
Vegan Vietnamese Banh Mi Sandwich
8 Ounces Lions Mane Mushroom, shredded
1 Tablespoon Cooking Oil
Salt, to taste
Pepper, to taste
1-2 Tablespoons Vegan Oyster Sauce
2 French Baguette Subs, 8 inches long (slice whole baguette)
Handful Cucumber, sliced
Handful Daikon Radish, sliced
Handful Carrot, julienned
1 Jalapeño , sliced
Handful Cilantro Sprigs
2 Tablespoons Plant-Based Mayo

METHOD
1. Shred lions mane mushroom into large chunks. Toss in cooking oil, salt, and pepper. Saute on medium heat for 15 minutes or until golden, then toss in vegan oyster sauce.
2. Construct banh mi sandwich by toasting a french baguette, brushing inside with plant-based mayo, stuffing with fresh veggies and cooked lions mane.

3️⃣ Go out to eat at vegan restaurants and try to recreate the dishes. This allows you to start deep diving online and learn the way. (DM me for my favs in Chicago… and spoiler most aren’t vegan, they just have GREAT vegan options.)

Vegan Chocolate Truffles 🥥🍫 It’s no surprise I love a dreamy dessert. I’m most likely daydreaming about a dessert that will take me to a cobblestoned European winter market. But since I’m not there… I’ll just have to make my own.

🎄🎄🎄I make this recipe as easy and minimal as possible! You can always switch it up by adding other toppings like peppermint or nuts.

MAKES 6-8
INGREDIENTS
3 Vegan Milk Chocolate Bars (my favorite is @lovochocolate)
1/4 Cup Coconut Cream
1 Tablespoon Plant Butter
1 Tablespoon Coconut Oil
Coarse Sea Salt, to top

METHOD
1. Bring coconut cream to boil and pour over 2 chocolate bars and butter. Allow chocolate to melt while stirring. Set refrigerator for 2-3 hours.
2. Roll chocolate into little truffle balls.
3. Melt 1 chocolate bar along with coconut oil. Dip truffles and coat evenly in chocolate. Place to dry on parchment paper.
4. Sprinkle with coarse sea salt and set in refrigerator to cool.
