Occasionally I find myself wondering where I would be if I never found the peace that comes from spending hours locked away in my kitchen. A fresh twist on a classic, these wraps combine creamy chickpeas, crisp veggies, and juicy grapes for a perfectly balanced plant-based bite.

Ingredients

Chickpea Salad Wraps

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1/4 cup red onion, diced
  • 1/2 cup grapes, sliced
  • 1 celery stalk, diced
  • 1/4 cup plant mayo
  • 2 tablespoons dijon mustard
  • 2 tablespoons vegetable broth
  • black pepper, to taste
  • salt, to taste
  • butter lettuce
  • 4 tortilla wraps

Method

Chickpea Salad Wraps

  • 1)

    Mash the Chickpeas: Lightly mash the chickpeas until about half are broken down, leaving some whole for texture.

  • 2)

    Mix the Salad: Add the red onion, celery, plant mayo, grapes, vegetable broth, dijon mustard, salt, and black pepper to the bowl. Stir until everything is well combined and coated. Adjust seasoning to taste.

    Assemble the Wraps: Lay a tortilla flat. Place a few leaves of butter lettuce in the center. Spoon about 1/4 of the chickpea mixture onto the lettuce.

  • 4)

    Roll it up: Fold in the sides of the tortilla, then roll tightly from the bottom to create a wrap. Slice in half.

    Serve: With kettle chips. These wraps are perfect for a quick lunch or meal prep.
