As Veganuary begins in full force, I have been getting many requests for quick and easy vegan recipes. January is the month of rebirth. Resolutions run rampant as everyone plots how they will become the best versions of themselves this year. So whatever that version of you is, I hope you embrace it and find the peace and happiness you deserve this year.
What is Veganuary?
Veganuary was started in 2014 by a couple in the UK to promote an animal consumption free lifestyle during the month of January. I have never quite looked at the term vegan as endearing, and that is just me being honest. While I couldn’t imagine one day saving one of my chicken patients from liver failure and the next eating a chicken sandwich? I also realize that not everyone is me. It takes an army to deconstruct the way we think about eating our animal friends.
The truth is that any positive changes you make to lower your animal consumption are a win that should be celebrated. That is why this year I have leaned more into promoting my page as a plant-based life. Because I think any form of extremity inevitable leads to failure. My hope for you this year is that you lower your consumption, whatever that may be for you.
How to Make a Plant-Based Sloppy Joe
A quintessential staple recipe from any midwestern childhood surely includes the sloppy Joe. These were on rotatation in our household, seeing as they only take 10-15 minutes to make. There are only a few changes needed to turn this meaty sandwich into a plant friendly version for the new year.
- Substitute ground beef for shredded oyster mushrooms
- Find a vegan version of Worcestershire sauce. Don’t forget that traditional Worcestershire has anchovies in it. This is the vegan version I use.
