North America is filled with so many amazing sandwiches. Choosing to eliminate or reduce animal products does not mean that you need to miss out on these amazing dishes. I’m a believer that we are consuming the story when we eat things like a Philly Cheesesteak. It’s about waiting in a line wrapped around the building to try one of Jims famous Cheesesteaks while everyone in line debates who has the best in the city. It’s about Jim serving you out of a tiny street side window, the messiest hoagie bun sandwich while you eat it on the street stoop and everyone nods in silence. Nodding in silence being the quintessential knowingness that good food is happening.
What Type of Vegan Cheese?
A classic Pennsylvania melty cheesesteak sandwich of goodness is going to be swimming in provolone cheese. I’m a sucker for making my own cashew cheese at home, so look out for that recipe in the future! For this sandwich, I used a store bought vegan mozzarella cheese by Daiya. To this day, daiya is the only brand of vegan cheese at the chain grocery stores that I like and melts. I tend to find the diamonds in the rough when I’m at markets or artisan shops. Let be honest, everything is better through artisan shops. Artisan shops make me feel like I should be wandering through the streets of a Beauty and The Beast movie. There’s something about cooking that washes a calmness over me. I spent a long time seeing things in black and white, but cooking has this ability to dial down the moments and quiet the chaos.
