You don’t want to give up your favorite dishes, but you also don’t want to eat meat. I get it, believe me I do. There is nothing I love more than slow cooking some pulled pork all day and indulging in a feast of potato salad, pulled pork sandwiches, and corn on the cob. The amazing texture of a shredded king oyster mushroom with have you so baffled you’ll be booking the next flight to Texas just to feel closer to this sandwich. It’s the flavors, the spices, the texture, the sauce… it’s a combined effort of all ingredients dancing perfectly together.
Shredded King Oyster Mushroom
There’s a plethora of different inventive ways to use king oysters. The first trick is locating them! Once upon a time, I searched far and wide through the vast valleys of Oakland County for this mushroom… okay, I went to like 5 grocery stores and then gave up.
One glorious blue skied day, I found them at the local farmers market and that day changed my life. Dramatic? That’s my brand. Since then, I’ve discovered that you can buy these babies at the Asian supermarket for a quarter of the price!
My first creation with these mushrooms was sliced and sautéed in a white wine butter sauce and served like a scallop. I thought that was the top of the mountain. I teetered with several preps, and that is when I read online that SHREDDING them was a thing. Yes, I was late to the party, but I promise it’s worth it. Simply use your fork to shred these mushrooms until they resemble the same texture and thickness as pulled pork. Mushrooms… is there anything they can’t do? Wild.
Uses For Left Over Pulled Pork
Leftover pulled pork is one of my absolute favorites. It is so versatile and goes in so many dishes. If you decide to whip up a dish like egg rolls– just add a slash or dash of your favorite asian ingredient to freshen it up and give it new life.

Liquid Smoke
Here’s the thing, why fix what’s not broke? When I take my first bite of a barbecue pulled pork sandwich, I want it to feel like summer. I want to be planning a bonfire while taking a quick swim break between bites. I am preparing this sandwich identically to the way I prepare a pulled pork sandwich. It is full of all the traditional barbecue ingredients like brown sugar, worcestershire sauce, and smoked paprika! One thing I did add is liquid smoke. Liquid smoke is quite literally a liquid that provides that smokey flavor to vegetables. Just 2-4 drops of this adds an entire new dimension to dishes like this barbecue sandwich!
